Watermellon, Tomatoes & Feta With Fresh Mint

This recipe comes from daughter Kelly.
4 cups medium diced watermellon (seedless)
4 cups medium diced tomatoes
1/4 cup chopped fresh mint
1/3 cup balsamic vinegar
1/4 cup honey
1/2 cup crumbled feta cheese
salt to taste
Combine watermellon and tomatoes in a mixing bowl. In a separate bowl mix the vinegar and honey, then adding it to the fruit. Add the chopped mint and salt. Toss and plate and then sprinkle on the feta. Variations are encouraged.
